This is something my cousin and I made sometime back. I've never made a "no bake" dessert (cookies, protein bars, or anything), so it's the first for me. That's why I'm glad that YouTube has almost any recipe you can think of. So for a no bake cheesecake, we used a couple of videos to learn and get an understanding.

Here's the one we used for the filling:


Raspberry, White Chocolate and Yogurt No Bake Cheesecake

Ingredients for no bake cheesecake filling:
  • 1 pkg cream cheese
  • 4 oz heavy whipping cream
  • 4 oz white chocolate (melted)
  • 4 -5 Tbsp powdered sugar
  • 5 - 6 oz raspberry preserves
  • 1 pkg gelatin
  • 3 tbsp hot water
  • 3/4 cup plain yogurt

Directions: No Bake Cheesecake Filling

Step 1) A few things to note. First, we wanted a smooth texture from our cheesecake, so before mixing the raspberry preserves with the rest of the filling, we microwaved it and ran it through a strainer to get as much seeds and clumps out. You may not need to do this if the preserves you use is already smooth.

Step 2) Second, the crust from the above video looks real yummy and healthy, being made from oatmeal and nuts. It should be perfect for a low carb cheesecake recipe with a crust. But at the time we made this cheesecake, we didn't have the proper ingredients, so we followed a more conventional graham crackers crust.

Step 3) Lastly, make your crust first and let it sit while you're making the filling.

Ingredients for the graham cracker crust:
  • 2 cups finely crushed graham crackers
  • 1/2 stick butter (room temperature)
Direction is simple. Crush graham crackers as finely or as coarsely as you wish. In a bowl, mix with butter until there's a crumb consistency. Add more butter if necessary. Just use a microwave if the butter is still cold. Press the crust mixture onto the bottom of the mold(s) you'll be using to make your cheesecake. Set aside, then make your filling as above. Allow to set overnight.
